At the heart of Muslim China, the Xinjiang region is the largest autonomous province of the country. As one of the many oasis of this desertic area, the city of Turpan is built around its market. Located in the center of the city, one can buy various dishes, but also mingle and talk between friends while enjoying one of the many Uyghur specialties prepared right on the spot. Unavoidable dish, the "stretched noodles", otherwise known as "Laghman", are fresh pasta beaten on the wooden table which allows the cook to give them more finesse.
